SAY HELLO TO DURN HOUSE'S
Our head chef Tony has been in the profession for 22 years. He moved to Scotland from his native Czech Republic almost 20 years ago, inspired by the quality and variety found on the Scottish food scene.
Tony has lent his skills to Michelin-star establishments across the country, from Peebles to Edinburgh, Fort William and now Portsoy.
He describes his style of food as up-market bistro-style, favouring unusual ingredients and highlighting foraged produce such as wild mushrooms, sea buckthorn and wild garlic - which can all be found abundantly around our rural and coastal location.
One of his ambitions has been to be able to grow and make his own produce on site, something he is fully embracing with Durn House's kitchen garden.
Alongside making his own bread, fermenting his own cheese and infusing gin for our lounge bar, Tony is establishing our first orchard here at Durn which will help keep the kitchen supplied with fresh, organic produce year-round.
